Synchronize scripts between Chrome installations

Using Tampermonkey, would it be possible to sync userscripts between Chrome installations? I want all of the userscripts that I've installed to be synced between all my computers.

This is already possible. At least for all scripts that are downloadable from a Webserver. Just set the config mode to beginner or advanced, enable TESLA, set the mode to chrome sync and login with chrome to your Google account.

The "Chrome sync" option looks very useful. Why isn't it enabled by default?

Cause it needs the "storage" permission that is not gained to Tampermonkey by default and Chrome extensions can request new permissions only inside of event handlers of user activity (i.e. a mouse click)
I later on may add the "storage" permission to Tampermonkey's default permissions but this has the disadvantage that every user will need to re-enable TM after this update.

Also, is it possible to synchronize individual JavaScript objects between different Chrome installations using TamperMonkey, for variables that are stored using GM_setValue?

Unfortunately not. But you can setup your own server and make your scripts sync some settings via that server.
